Ingredients for the Patties:
- Red Kidney Beans: 1 can (approx. 400g/15oz), rinsed and drained.
- Red Onion: 1/2 medium onion, finely chopped.
- Fresh Parsley: A small handful, finely chopped.
- Rolled Oats: Approx. 1/2 cup (used as a binder).
- Paprika: 1 teaspoon.
- Mustard: 1 tablespoon (yellow or Dijon).
- Soy Sauce: 1 to 2 tablespoons (adds “umami” flavor).
- Salt and Pepper: To taste.
For Assembly:
- Burger Buns: Toasted (brioche-style or seeded).
- Base Spread: Sweet potato mash or hummus (the orange spread in the video).
- Grilled Vegetables: Zucchini slices and red peppers.
- Caramelized Onions: Red onions cooked slowly until soft.
- White Sauce: Vegan mayo or a garlic yogurt sauce.
- Vegan Cheese: (Optional).
Instructions:
- Prepare the Base: Place the drained kidney beans in a large bowl. Use a potato masher to crush them until you have a thick paste, leaving some chunks for texture.
- Add Aromatics: Stir in the finely chopped red onion and fresh parsley.
- Season and Bind: Add the oats, paprika, mustard, and soy sauce.
- Mix: Use your hands (or a spoon) to combine everything thoroughly until the mixture is firm enough to hold its shape.
- Shape and Cook: Form the mixture into thick patties. Place them on a hot grill or pan. Cook for a few minutes on each side until they have nice grill marks and a crispy exterior.
- Assemble the Burger:
- Spread a generous layer of sweet potato mash or hummus on the bottom bun.
- Layer the roasted red peppers.
- Add the bean patty (and a slice of vegan cheese if desired).
- Add the grilled zucchini slices and plenty of caramelized onions.
- Finish with a dollop of vegan white sauce on the top bun.
Enjoy your delicious homemade vegan burger!
