Reduce the stove heat to low. Pour the entire can of evaporated milk directly into the pot with the pasta and the starchy water. Stir well and let it come to a very gentle simmer.
Step 3: The “Handful” Cheese Melt π§
Make sure the heat is on its lowest setting (if the pot is too hot, the cheese will seize!).
Add your freshly grated cheese into the pot one handful at a time. Stir continuously with a wooden spoon or silicone spatula. Wait until the first handful is completely melted and smooth before adding the next handful.
