- Β½ cup Canned Full-Fat Coconut Milk: (Or heavy cream, if you prefer dairy).
- 1 tbsp Maple Syrup: (To enhance the natural sweetness of the squash).
- Β½ tsp Ground Cinnamon, ΒΌ tsp Ground Nutmeg, & a tiny pinch of Cayenne Pepper.
- Garnish: Roasted pumpkin seeds (pepitas) and a swirl of cream.

Step 1: The “No-Peel” Oven Prep π
Preheat your oven to 400Β°F (200Β°C). Line a large, rimmed baking sheet with parchment paper.
Take your butternut squash and cut it in half lengthwise. (If it is too hard to cut, microwave the whole squash for 3 minutes to slightly soften the skin!) Use a spoon to scrape out the seeds.
Step 2: Oil and Season
Place the two squash halves (cut-side UP), the quartered onions, and the exposed head of garlic onto the baking sheet. Drizzle everything generously with olive oil, using your hands to rub the oil all over the exposed flesh of the squash. Season heavily with salt and black pepper.
Step 3: The “Face Down” Caramelizing Roast π₯
The Secret to Caramelization: Flip the squash halves so they are cut-side DOWN on the parchment paper! Wrap the head of garlic in a small piece of aluminum foil.
Roast in the 400Β°F oven for 45 to 55 minutes. You will know it is done when the skin of the squash is wrinkled, and you can easily pierce through the skin with a fork without any resistance.
