Creamy Tuscan Salmon with Garlic Butter & Spinach (20 Minute Recipe)

This is the kind of meal you pay $30 for at an Italian restaurant. But guess what? You can make it at home in one pan, in less than 20 minutes. It’s rich, creamy, and feels indulgent, yet it’s totally Keto and Low Carb.

Ingredients:

  • 4 Salmon Fillets (skin on or off, your choice).
  • 2 tbsp Olive Oil.
  • 1 tbsp Butter.
  • 3 cloves Garlic, minced.
  • 1/2 cup Sun-dried Tomatoes (in oil, drained).
  • 2 cups Fresh Baby Spinach.
  • 1/2 cup Heavy Cream (or full-fat coconut milk for dairy-free).
  • 1/4 cup Parmesan Cheese.
  • Salt, Pepper, Italian Seasoning.

  1. Sear the Salmon: Season salmon with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear salmon for 4-5 minutes per side until crispy and cooked through. Remove from pan and set aside.
  2. The Aromatics: In the same pan (don’t clean it! flavor!), add butter and garlic. Sauté for 1 minute.
