Authentic Caesar dressing uses raw egg yolks and anchovies. My version is easier, safer, and (I think) tastier. It uses mayonnaise as the base for that instant creamy texture, and Worcestershire sauce for that savory “umami” kick without dealing with whole fish.

Ingredients:
- 1/2 cup Mayonnaise (Hellmann’s/Best Foods).
- 1/4 cup Parmesan Cheese, grated finely.
- 2 tbsp Lemon Juice (fresh!).
- 1 tbsp Olive Oil.
- 1 tsp Dijon Mustard.
- 2 cloves Garlic, minced.
- 1 tsp Worcestershire Sauce.
- Lots of Black Pepper.
Instructions:
- Whisk: Combine all ingredients in a bowl or jar. Whisk until smooth.
- Taste: Add more lemon if you want it tangier, or more pepper for spice.
- Chill: Let it sit in the fridge for 30 minutes before serving to let the garlic flavor develop.
- Toss: Toss with crisp Romaine lettuce and croutons right before eating.
