Classic Cucumber Tea Sandwiches (How to Prevent Sogginess)

Cucumber sandwiches are the epitome of elegance for bridal showers and Spring teas. But cucumbers are 95% water, which means they can turn bread into mush fast. Here is my “barrier method” to keep them fresh.

Ingredients:

  • White BreadΒ (Soft sandwich bread).
  • 1Β English Cucumber (thinly sliced).
  • 8 ozΒ Cream Cheese, softened.
  • 2 tbspΒ Fresh Dill, chopped.
  • 1 tspΒ Lemon Zest.
  • Salt.

  1. Sweat the Cukes:Β Slice cucumbers thinly. Lay them on paper towels and sprinkle with salt. Let sit for 15 mins to draw out water. Pat dry.
  2. The Barrier:Β Mix cream cheese, dill, and lemon zest. Spread a layer of this mixture onΒ BOTHΒ slices of bread. The fat in the cheese creates a waterproof barrier.
  3. Assemble:Β Place cucumbers on one slice. Close the sandwich.
  4. Cut:Β Cut off the crusts (crusts are illegal at tea parties!). Cut into triangles or fingers.
