As a sourdough baker, the most painful part of the process is throwing away the “discard” every time you feed your starter. Stop wasting flour! Theseย Sourdough Discard Crackersย are tangy, buttery, super crispy, and way better than store-bought Cheez-Its. Plus, they take 5 minutes to prep.

Ingredients:
- 1 cup (approx 200g)ย Sourdough Discard (unfed starter).
- 2 tbspย Butter, melted.
- Sea Saltย (flaky salt is best for topping).
- Optional Herbs:ย Dried rosemary, garlic powder, or Everything Bagel Seasoning.
Instructions:
- Prep:ย Preheat oven toย 325ยฐF (160ยฐC). Line a baking sheet with parchment paper.
- Mix:ย In a small bowl, whisk the sourdough discard with the melted butter.
- Spread:ย Pour the mixture onto the parchment paper. Use a spatula to spread itย very thin. It should be almost see-through in spots. The thinner it is, the crispier it gets!
- Season:ย Sprinkle generously with sea salt and your chosen herbs.
- Bake (Part 1):ย Bake for 10 minutes. Remove from oven.
- Score:ย Use a pizza cutter or knife to score the dough into squares (this makes them break evenly later).
- Bake (Part 2):ย Put back in the oven for another 20-30 minutes until golden brown and dry.
- Cool:ย Let them cool completely on the pan. Snap along the score lines and enjoy!
