Ingredients:

  • 2 Large Chicken Breasts, sliced into cutlets.
  • 1/2 cup Sun-Dried Tomatoes (in oil, chopped).
  • 3 cloves Garlic, minced.
  • 1 cup Heavy Cream.
  • 1/2 cup Chicken Broth.
  • 1/2 cup Parmesan Cheese, grated.
  • 1 tsp Red Pepper Flakes (for a little heat).
  • Fresh Basil for garnish.
  • Pasta: Rigatoni or Penne works best.

  1. Sear Chicken: Dredge chicken in flour/salt/pepper. Sear in a skillet with olive oil until golden (about 4 mins per side). Remove and set aside.
  2. Start Sauce: In the same pan, sauté garlic for 1 minute. Add chicken broth to deglaze the pan (scrape up the brown bits!).
  3. Simmer: Add the heavy cream and sun-dried tomatoes. Simmer for 5 minutes until slightly thickened.
