Perfect Chocolate Covered Strawberries (How to Make Them Smooth!)

Why pay $50 for a box of Shari’s Berries when you can make them better at home for $10? The biggest mistake people make is wet strawberries = seized chocolate. Follow my bakery secrets for smooth, shiny chocolate-covered strawberries that don’t sweat.

Ingredients:

  • 1 lb Fresh Strawberries (look for large ones with nice green leaves).
  • 1 cup Semi-Sweet Chocolate Chips (or Dark).
  • 1/2 cup White Chocolate Chips (for drizzle).
  • 1 tsp Coconut Oil (The secret for the shine!).

  1. Wash & DRY: Wash the berries, then pat them dry with paper towels. Let them sit on the counter for 20 minutes to air dry completely. Water is the enemy.
  2. Melt: Microwave chocolate chips with coconut oil in 30-second intervals, stirring in between. Stop when it’s mostly melted and stir to finish. Don’t overheat!
  3. Dip: Grab the strawberry by the leaves. Dip, twist, and shake off the excess.
  4. Set: Place on a baking sheet lined with Parchment Paper (not foil!).
  5. Decorate: Melt the white chocolate. Pour it into a small ziplock bag, snip the tiny corner, and drizzle quickly over the dark chocolate.
  6. Chill: Fridge for 15 minutes to set.
