It is one of my all-time favorite salsa recipes homemade, and it takes exactly 10 minutes to chop up! The juicy, sweet mango pairs perfectly with the sharp red onion, the zesty lime juice, and the spicy kick of jalapeรฑo. It is incredibly refreshing, naturally vegan, gluten-free, and guaranteed to be the most colorful dish at your next summer BBQ.
๐ The Ingredients (The Colorful Mix)
The secret to a great salsa is fresh ingredients and getting the perfect balance of sweet, acid, and heat!
- 2 Largeย Ripe Mangos, peeled and diced.ย (See my cutting hack below!).
- 1 cupย Cherry Tomatoes, quartered.ย (Cherry tomatoes are sweeter and less watery than large tomatoes).
- 1/2ย Red Onion, finely diced.
- 1ย Jalapeรฑo, seeded and finely minced.ย (Leave the seeds in if you like it really hot!).
- 1/2 cupย Fresh Cilantro, chopped.
- The Juice of 1 Fresh Lime.
- A pinchย of Salt to taste.
๐ฉโ๐ณ Step-by-Step Instructions
Step 1: The “Hedgehog” Mango Hack ๐ฆ
If you don’t know how to easily dice a mango, here is the ultimate kitchen trick! Cut the two large “cheeks” off the mango, slicing right alongside the flat pit in the center. Take a paring knife and score a grid pattern (criss-cross lines) into the flesh of the cheek, being very careful not to cut through the skin.
Push the skin inside-out (it will pop up and look like a hedgehog!), and simply slice the perfect cubes right off into your bowl!
Step 2: Dice the Veggies
Finely dice your red onion and jalapeรฑo. Pro-Tip: Make sure to dice the onion and jalapeรฑo much smaller than the mango and tomatoes. You want the mango to be the star of the bite, not a massive chunk of raw onion!
Step 3: Combine
In a large, beautiful serving bowl, combine your diced mango, quartered cherry tomatoes, red onion, jalapeรฑo, and fresh cilantro.
Step 4: Dress It Up
Squeeze the fresh lime juice directly over the bowl. Add a good pinch of salt. The salt is crucial because it balances the sweetness of the mango and draws out the natural juices! Use a large spoon to gently toss everything together until well combined.
Step 5: The “Marination” Wait ๐ง
You can serve this immediately, but it is 10x better if you cover the bowl and let it sit in the fridge for 15 to 20 minutes before serving. This allows the lime juice to break down the onions slightly and lets all the sweet and spicy flavors marry together perfectly!
