Known as “Hotdish” in the Midwest, the Tater Tot Casserole is a staple for busy weeknights. It stretches a pound of ground beef to feed a whole family, and who can say no to a blanket of crispy, golden potatoes covered in melted cheese?

Ingredients:
- 1 lb Ground Beef.
- 1/2 Onion, diced.
- 2 cloves Garlic, minced.
- 1 can (10.5 oz) Cream of Mushroom Soup (or Cream of Chicken).
- 1 cup Frozen Corn or Peas.
- 2 cups Cheddar Cheese, shredded.
- 1 bag (32 oz) Frozen Tater Tots.
Instructions:
- Brown Meat: Preheat oven to 375°F (190°C). In a skillet, cook beef, onion, and garlic until browned. Drain fat.
- Mix Base: Stir the cream soup and frozen veggies directly into the beef. Season with salt and pepper.
- Layer: Spread the beef mixture evenly into a 9×13 baking dish.
- Cheese: Sprinkle 1 cup of cheese over the beef.
- The Tots: Arrange the frozen tater tots in a single, neat layer covering the entire dish.
- Bake: Bake for 35-40 minutes until tots are crispy. Top with the remaining 1 cup of cheese and bake 5 more minutes until melted.
