If you want tender ribs, you MUST remove the thin, silvery membrane on the back of the ribs. Slide a butter knife under the membrane at one end of the rack to lift it, grab it with a paper towel (for grip), and peel the whole sheet off. If you leave it on, the ribs will be tough and chewy!
