But there is a ticking clock on fresh sweet corn. Within 48 hours of being picked, the natural, juicy sugars inside the kernels begin turning into bland, starchy carbohydrates. If you can’t eat it all in two days, you need to preserve it.

Step 1: The “Blanch” (Do Not Skip This!) π
Can you freeze raw corn without cooking it? Technically yes, but it will taste like chewy cardboard in 3 months!
Bring a large stockpot of water to a rolling boil. Do not add salt (salt toughens the corn). Gently drop your shucked ears of corn into the boiling water.
Boil medium-sized ears for exactly 4 to 5 minutes. This process, called blanching, deactivates the enzymes that degrade flavor and color.
Step 2: The Ice Bath Shock π§
Using tongs, immediately remove the hot ears of corn and plunge them directly into the large bowl of ice water. Let them sit in the ice bath for 5 minutes until they are completely cold to the touch. This stops the cooking process instantly so the corn stays crisp!
Remove from the water and pat them dry with a clean kitchen towel.
Step 3: The Genius “Bundt Pan” Hack πͺ
If you have ever tried cutting corn off a cob on a flat cutting board, you know the kernels bounce and fly all over the kitchen.
The Secret: Take your metal bundt pan and place it on the counter. Stand an ear of corn straight up, resting the flat bottom of the cob directly on the center hole of the pan.

If you prefer eating freezing corn on the cob whole rather than cutting the kernels off, the process is almost identical!
- Blanch the whole ears forΒ 6 to 8 minutesΒ (they need a little longer than cut corn).
- Plunge into the ice bath until completely cold.
- Dry them incredibly well, wrap each ear tightly in plastic wrap, and place them together in a large freezer bag!
