Step 1: The “Frozen Disc” Hack (Do This First!) βοΈ
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
The Secret: Line a small baking sheet or plate with parchment paper. Transfer the cream cheese mixture to a piping bag (or a Ziploc bag with the corner snipped off). Pipe the cream cheese into 12 tall, thick, round discs onto the parchment paper. Place the plate directly into the freezer for 1 to 2 hours until they are solid frozen pucks!
(When baked, these frozen pucks melt at the exact same rate the muffin batter rises, keeping them perfectly suspended in the center!)
Step 2: Whisk the Wet Ingredients
Preheat your oven to 375Β°F (190Β°C). Line a 12-count muffin tin with paper liners.
In a large bowl, whisk together the pumpkin puree, vegetable oil, white sugar, brown sugar, eggs, and vanilla extract until completely smooth.
Step 3: Fold in the Dry Ingredients
In a separate bowl, whisk the flour, baking soda, baking powder, salt, and pumpkin pie spice. Pour the dry ingredients into the wet pumpkin mixture. Use a rubber spatula to gently fold the batter just until no dry streaks of flour remain. Do not overmix, or your muffins will be tough!
Step 4: The Assembly
Divide the thick pumpkin batter evenly among the 12 muffin liners. They should be filled almost to the very top.
Remove your frozen cream cheese discs from the freezer. Gently press one frozen disc directly into the top center of each muffin. Push it down just slightly so it is flush with the batter, but do not bury it! Sprinkle the pumpkin seeds around the edges of the cream cheese.

Bake in the preheated 375Β°F oven for 18 to 22 minutes. The high heat will create a beautiful tall dome, and the cream cheese will soften perfectly without sinking! Use a toothpick to test the orange cake part (avoid the cream cheese center).
