- 2 Medium Zucchini: (Diced into bite-sized cubes. Do NOT peel them—the green skin adds beautiful color and prevents them from turning to mush!).
- 4 Slices of Thick-Cut Bacon: (Chopped. This creates the savory, smoky flavor base. To make it vegan, omit the bacon and use 2 tablespoons of olive oil with a dash of smoked paprika!).
- 1 Medium Yellow Onion & 1 Red Bell Pepper: (Finely diced).
- 3 cloves Fresh Garlic: (Minced).
- 3 cups Chicken Broth or Vegetable Broth.
- 1 cup Milk of Choice: (Whole milk, unsweetened almond milk, or oat milk all work beautifully).
- 1 tsp Fresh Thyme, ½ tsp Salt, & ½ tsp Black Pepper.

Step 1: Crisp the Bacon Base 🥓
Place a large Dutch oven or heavy-bottomed soup pot over medium heat. Add the chopped bacon and cook for 6 to 8 minutes until the bacon is incredibly crispy and the fat has rendered. Use a slotted spoon to remove the crispy bacon bits to a paper towel-lined plate, leaving the bacon fat in the pot. (This fat is liquid gold for flavoring the soup!).
Step 2: Sauté the Aromatics
Add the diced yellow onion, red bell pepper, and zucchini to the bacon fat in the pot. Sauté for 5 minutes until the vegetables are softened. Stir in the minced garlic and fresh thyme, and cook for 1 more minute until fragrant.

Here is how we skip the heavy cream and flour!
Take HALF of your corn kernels (about 1 ½ cups) and place them into a blender. Add 1 cup of the chicken broth. Blend on high for 60 seconds until the mixture is completely smooth and creamy.
Sweet corn is naturally packed with starch. When you blend it and heat it, it acts exactly like a flour roux, thickening the soup naturally!
Step 4: Simmer and Thicken
Pour your creamy blended corn mixture into the soup pot. Add the remaining whole corn kernels, the rest of the chicken broth (2 cups), and the 1 cup of milk.
