If you search the internet for the best zucchini desserts, you will find hundreds of recipes for “Zucchini Bars.” But here is the tragic truth: most of those recipes are just zucchini cake baked in a flat pan. They turn out spongy, light, and airy.
A true dessert “bar” should be dense, rich, and incredibly chewy—exactly like a classic chocolate chip blondie!

- 1 tsp Pure Vanilla Extract.
- 1 ½ cups All-Purpose Flour: (Spoon and leveled).
- 1 ½ tsp Ground Cinnamon & ¼ tsp Ground Nutmeg.
- ½ tsp Baking Soda & ½ tsp Salt: (Notice what is missing? NO baking powder! Baking powder makes things fluffy and cake-like. By omitting it, our bars stay beautifully dense!).
The Cream Cheese Frosting:
- 1 block (8 oz) Full-Fat Cream Cheese: (Softened to room temperature).
- ¼ cup (½ stick) Unsalted Butter: (Softened).
- 2 ½ cups Powdered Sugar & 1 tsp Vanilla Extract.
🍳 Step-by-Step Masterclass Instructions
Step 1: The “Bone-Dry Squeeze” Hack (Crucial!) 🛑
For zucchini bread, we leave the water in. For zucchini BARS, we must remove it!
Using a box grater, grate your unpeeled zucchini. Place the grated zucchini into the center of a clean, thin kitchen towel or cheesecloth. Gather the corners and squeeze over the sink as hard as you possibly can. Wring it out until absolutely no more green water drips. You should be left with a dry, compact ball of zucchini threads.
Step 2: Whisk the Wet Ingredients
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large mixing bowl, whisk together the melted butter, brown sugar, and white sugar until smooth. Whisk in the eggs and vanilla extract.
Step 3: Combine and Fold
Add the flour, baking soda, salt, cinnamon, and nutmeg to the bowl. Use a rubber spatula to gently fold the mixture until just combined. Finally, fold in your dry, squeezed zucchini until it is evenly distributed. (The batter will be extremely thick—almost like cookie dough!).
