These adorable “Bird’s Nest” cookies are a Spring tradition. They look like tiny nests holding colorful eggs, and the mix of crunchy noodles and sweet chocolate is surprisingly addictive. Best of all? You don’t even need to turn on your oven.
Ingredients:
- 1 cup Semi-Sweet Chocolate Chips.
- 1/2 cup Butterscotch Chips or Peanut Butter Chips (Adds incredible flavor!).
- 2 cups Chow Mein Noodles (or thin pretzel sticks broken up).
- Cadbury Mini Eggs (or pastel M&Ms).
Instructions:
- Prep: Line a baking sheet with parchment paper.
- Melt: Microwave the chocolate and butterscotch chips together in 30-second intervals until smooth.
- Coat: Pour the melted chocolate over the chow mein noodles. Toss gently until all the noodles are coated.
- Shape: Drop spoonfuls onto the parchment paper. Use a spoon (or your fingers) to create an indent in the center of each mound to look like a nest.
- Decorate: Place 3 Cadbury eggs into the center of each nest while the chocolate is still wet.
- Set: Chill in the fridge for 30 minutes to harden.
