They feature a melt-in-your-mouth, buttery shortbread crust, topped with a rich, sweet custard filling that perfectly balances the tart, tangy bite of fresh rhubarb. They are one of my favorite easy rhubarb recipes to bring to Spring potlucks, and they always disappear first at Memorial Day cookouts!

The Buttery Shortbread Crust:
- 2 cupsย All-Purpose Flour.
- 1/4 cupย Granulated Sugar.
- 1 cup (2 sticks)ย Cold Unsalted Butter, cubed.ย (Cold butter makes the crust flaky!)
The Creamy Custard Filling:
- 4ย Large Eggs.
- 1 1/2 cupsย Granulated Sugar.ย (Rhubarb is very sour, so we need the sugar to balance it out!)
- 1/2 cupย All-Purpose Flour.
- 1/2 tspย Salt.
- 1/4 cupย Heavy Cream or Whole Milk.
The Star Ingredient:
- 4 cupsย Fresh Rhubarb, finely diced into 1/2-inch pieces.ย (Do not use frozen rhubarb for this recipe, it will make the custard too watery!).
๐ฉโ๐ณ Step-by-Step Instructions
Step 1: The “Blind Bake” Crust ๐
Preheat your oven to 350ยฐF (175ยฐC). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides (this makes it so easy to lift the bars out later!).
In a bowl, cut the cold butter into the 2 cups of flour and 1/4 cup of sugar until the mixture resembles coarse crumbs. Press this mixture firmly and evenly into the bottom of your prepared pan.
Crucial Step: Bake the crust by itself for 10-12 minutes until lightly golden. If you pour the custard over a raw crust, you will get a soggy bottom!
Step 2: Whisk the Custard
While the crust is baking, whisk the eggs, 1 1/2 cups of sugar, 1/2 cup of flour, salt, and heavy cream in a large bowl until completely smooth and creamy.
Step 3: The Rhubarb Layer
Take the hot crust out of the oven. Scatter your finely diced fresh rhubarb evenly over the baked crust.
Step 4: Pour and Bake
Pour the creamy custard mixture directly over the rhubarb. Return the pan to the oven and bake for 40 to 45 minutes. You will know it is done when the custard is set (no longer jiggling in the center) and the top is a light golden brown.
Step 5: The “Chill Out” Rule (Do Not Skip!) ๐ง
This is the hardest part of the recipe: Waiting. Do not try to cut these bars while they are warm! The custard needs time to firm up. Let the pan cool completely at room temperature, then transfer it to the refrigerator for at least 2 hours.
๐ช How to Get Perfect Slices:
Once completely chilled, use the parchment paper overhang to lift the entire block of bars out of the pan and onto a cutting board. Use a large, sharp chef’s knife to cut them into squares. Wipe your knife blade clean with a damp paper towel between every single cut for those aesthetic, bakery-perfect edges!
