Summer is finally here, and it is officially time to start planning your 4th of July cookout menu!

When it comes to patriotic desserts, you need something that is bright, festive, feeds a large crowd, and most importantly: survives the summer heat. Enter the legendary Red, White, and Blue Poke Cake.

If you have never made a “Poke Cake,” you are in for a treat. By poking holes into a freshly baked white cake and pouring liquid Jell-O over the top, the cake absorbs the vibrant colors and fruity flavors, resulting in the most incredibly moist and refreshing summer dessert you will ever eat. It screams Independence Day and takes almost no effort to make!

πŸ›’ The Ingredients (The Semi-Homemade Secret)

We are keeping this stress-free by using a box mix base. The magic is all in the assembly!

  • 1 box (15.25 oz)Β White Cake MixΒ (Plus the oil, water, and egg whites required on the back of the box. Use egg whites only to keep the cake purely white!).
  • 1 box (3 oz)Β Cherry or Strawberry Jell-O powder (For the Red!).
  • 1 box (3 oz)Β Berry Blue Jell-O powder (For the Blue!).
  • 2 cupsΒ Boiling Water (1 cup for each Jell-O flavor).
  • 1 tub (8 oz)Β Cool Whip, thawed (or 3 cups of homemade stabilized whipped cream).
  • Festive Sprinkles:Β Red, white, and blue star sprinkles for the top!

πŸ‘©β€πŸ³ Step-by-Step Instructions

Step 1: Bake the Base
Bake your white cake in a greased 9×13 inch baking dish according to the package directions.

Step 2: The “Wooden Spoon” Hack πŸ›‘
Once the cake comes out of the oven, let it cool for about 10 minutes. While it is still slightly warm, take the handle of a wooden spoon and poke holes all over the top of the cake, about 1 inch apart.
Pro-Tip: Do not use a fork or a toothpick! The holes will be too small and the Jell-O won’t pool beautifully. You need the thick, round handle of a wooden spoon!

Step 3: Mix the Jell-O
In two separate bowls, mix your red Jell-O powder with 1 cup of boiling water, and your blue Jell-O powder with 1 cup of boiling water. Stir each for 2 minutes until completely dissolved. (Note: We are intentionally skipping the “cold water” step on the Jell-O box so the liquid stays concentrated and colorful!).

Step 4: The Stripe Pour
Carefully pour the red Jell-O liquid over half of the holes in the cake. Then, pour the blue Jell-O liquid over the remaining holes. You can do this in alternating rows for a cool striped effect inside the cake!

Step 5: The Crucial Chill 🧊
Cover the cake with plastic wrap and place it in the refrigerator for at least 3 to 4 hours (overnight is even better!). The Jell-O needs time to set up inside the cake crumb, making it dense, moist, and incredibly flavorful.

Step 6: Frost and Decorate
Once the cake is completely chilled, spread a thick, fluffy layer of thawed Cool Whip over the top. Garnish generously with your patriotic red, white, and blue sprinkles. Keep refrigerated until ready to serve at your 4th of July BBQ!
