While dump cakes with canned fruit are great for a busy weeknight, there is absolutely nothing that compares to an old-fashioned Fresh Peach Cobbler recipe. When baked, fresh peaches release a thick, naturally sweet, caramelized syrup that canned fruit simply cannot replicate.

The Fresh Peach Filling:
- 6 to 8 Medium Fresh Peaches (Make sure they are ripe but slightly firm so they don’t turn to mush in the oven!).
- 1/4 cup Granulated Sugar & 1/4 cup Brown Sugar.
- 1 tbsp Lemon Juice (The acid brightens the peach flavor!).
- 1 tsp Cinnamon & 1/2 tsp Nutmeg.
The Buttery Cobbler Batter:
- 1 cup All-Purpose Flour.
- 1 cup Granulated Sugar.
- 2 tsp Baking Powder & 1/4 tsp Salt.
- 3/4 cup Whole Milk.
- 1/2 cup (1 stick) Unsalted Butter.

Step 1: The 10-Second Peeling Hack (Crucial!) 🛑
Do NOT use a vegetable peeler on soft peaches! You will mangle the fruit.
The Chef’s Secret: Bring a large pot of water to a rolling boil. Prepare a large bowl filled with ice water next to it.
Using a knife, carefully score a shallow “X” into the bottom of each peach. Drop the peaches into the boiling water for exactly 30 to 45 seconds. Use a slotted spoon to transfer them immediately into the ice water.
